Spinach & Feta
Turkey Meatloaf
Ingredients
  • 1 package ground turkey
  • 1 large bag baby spinach
  • 1 clove garlic chopped
  • ¼ cup feta (optional)
  • olive oil, salt, pepper, paprika
  • Baby potatoes (~6-8 potatoes per person)
  • Brussels Sprouts
HOW 
to
  • Preheat oven to 400.
  • Rinse the potatoes and Brussels sprouts and cut into desired size.
  • Place on same or separate parchment-lined baking sheet.
  • Drizzle with olive oil, salt, pepper, and paprika.
  • Cook approximately 35-40 mins, mixing occasionally.
  • Place 1 tbsp olive oil in a pan & add the chopped garlic.
  • Saute spinach for approximately 4 minutes.
  • Place the ground turkey in a bowl and sprinkle with salt, pepper, paprika & mash with a fork.
  • Allow the spinach to cool slightly and add to the turkey.
  • Add the feta (optional) and continue to mash with a fork or hands.
  • Form into a loaf and place in the center of a baking dish.
  • Lower oven to 350 and cook approximately 35-40 mins or until turkey is cooked through.
