Chickpea Salad
Ingredients
  • 1 can chickpeas rinsed
  • 1 whole tomato chopped
  • 1 cucumber
  • 3 tbsp kalamata olives cut in half
  • ¼ cup feta cheese (optional)
  • 1 + tbsp olive oil
  • salt, pepper, oregano or Italian seasoning
HOW 
to
  • Rinse & strain the chickpeas place in a bowl with an air-tight lid.
  • Chop the tomatoes & cucumber & add to the beans.
  • Add the olives using some of the liquid.
  • Crumble a little feta on top.
  • Add the oil, salt and pepper, seasoning, and mix well.
  • Place half of the mixture in a bowl and save the other half for
  • another meal.
