Broccoli
Cobb Salad
Ingredients
  • 1 small head of broccoli
  • 1 can chickpeas
  • 1 tomato chopped or
  • 1/2 container grape tomatoes cut in halves
  • 2 hard-boiled eggs diced
  • 1/2 avocado
  • red onion (optional)

Creamy Avocado Dressing

  • 1 ripe avocado
  • 1/4 cup olive oil
  • juice from 1/2 lemon
  • 1 small clove garlic
  • Salt & Pepper
HOW 
to
  • Chop the raw broccoli into small pieces and place in a bowl.
  • Rinse & strain the chickpeas & add to the bowl.
  • Add the chopped tomato & diced egg.
  • Blend all the ingredients for the dressing & pour over the salad mixing well. (Store any extra in a mason jar in the fridge).
  • Add a little salt, pepper & other desired spice. Store in a seal-tight container in the refrigerator.
