Avocado
Egg Salad
Ingredients
  • 4 hard-boiled eggs
  • 1 avocado
  • drizzle of olive or avocado oil
  • salt, pepper, paprika
  • juice from ¼ lemon
  • tsp Dijon mustard
  • (optional)
HOW 
to
  • Peel the eggs and mash in a bowl.
  • Scoop out the avocado and mash into the egg mixture.
  • Add the oil, lemon, (mustard), and seasonings and mix until well combined.
  • Serve over a bed of greens or on a piece of toast with tomato and greens.
  • (Tastes great with a little honey mustard!) Makes 2-3 servings.
